Potato and Chickpeas Soup

Nohutlu Patates Çorbası


Prep. Time: 10 minutes 
Cook. Time: 30-35 min. 


For 4 persons we will need:

1 glass chickpeas (boiled)
2 cloves garlic (minced)
2 mid size potatoes (peeled and diced)
1 onion (chopped fine)
4 spoons olive oil
1 pinch of saffron
5-6 glasses water
3 dry hot red pepper
5 coriander seeds
7-8
sprigs of mint
8-10 sprigs of parsley
1 glass (100 ml) raisins
2 mid size tomatoes
1 spoon lemon juice
Salt, cumin


Preparation:

In a medium size saucepan fry peeled and diced potatoes, onion and garlic in olive oil for 2-3 minutes. 

Add the saffron and water (I added chicken broth) and mix. 

Add salt, coriander (crushed), cumin and dry hot pepper, and cook for 15 minutes over moderate heat. 

Then add cooked chickpeas. 

Add chopped mint (I added 1spoon dry mint) and parsley. 

Add raisins (which should stay for a few minutes in hot water, then drain the water) and cook for 5-10 minutes.

Add peeled and cut into dice tomatoes

and lemon juice.


Cook another 5 minutes, remove from heat and serve hot.
